Today was a continuation of trying to diagnose Lola’s issues. So we didn’t really venture too far from the van…all the attention is on Lola right now! Translation: I got a chance to hole up with the mystery novel I’ve started and Todd went around to different parts shops and called our trusted Sprinter mechanic in South Carolina, Dr. A.
Breakfast: Time to eat up the veggies before we get to Chile! Brewed another wonderful batch of coffee. Cooked up a veggie scramble. Little round green squashes that are slightly tart with swiss chard and onion, some parsley-ed eggs on the side. STARTED pressure cooker/Wonderbag dinner!
Last night we were instructed to drive as far as we could to see if Lola would choke up again (it seems its either a fuel issue or an electrical issue). We stayed at the same camp site we had the night before, its perfectly nestled in a valley and entirely remote! No one but us! So we had a slow morning. I even did a load of hand-washed laundry!
Lunch: SANDWICHES! I decided Todd would be pleasantly surprised while taking a break from Lola’s issues. Brown whole grain bread, mustard, mayo, parsley, alternated with cucumbers and avocadoes. These made the mortadella, Salami, and gouda cheese the stars.
A little something sweet: bannanas, cherries, and tea biscuits.
It always feels that we eat so healthy when I need to use up the produce, why is that? I feel like I frequently hold off on using the prized produce until I really have to…I’m sure this will change when we don’t have to worry about such frequent border crossings. The Patagonia highlights (mountains, towns, and glaciers) seems to be evenly split between the two countries and thus require the traveler to go back and forth between both countries quite frequently.
Dinner: Approximately 8 hours after heating up the contents of our dinner, we opened it up and ate it! After breakfast time (while Todd was changing out the air filter and checking out Lola’s motor) I threw the following into our pressure cooker: water, pumpkin, onions, mushrooms, white beans, and fresh parsley. I heated up the pot on medium heat until it got to pressure, approximately 5 minutes of time. Then I secured it in the Wonderbag for 6 hours or so.
We had this vegetarian stew with day old white bread…very tasty especially after a long day of looking for a mechanic that could help us measure the pressure coming out of the fuel pump.
Looks like you’re having fabulous meals.
Did you get Lola fixed?
She is running fine. We might have her fixed but not sure. Time will tell. The issue is small we are pretty sure.
Good!
